Anthony is an excellent cook, and we used to put a lot of effort into finding and trying new recipes. Eventually we started noticing that our favorite foods were the simplest. The sandwich in Paris that was just butter and jambon on a baguette and the best thing we’d tasted. Sardines on a Triscuit. A simple piece of salmon perfectly cooked with just a pinch of flaky sea salt.

Actually, these days, we don’t even really eat structured meals, we simply eat when we’re hungry, and we eat simply.

Our fridge and coat closet (pantries are not a thing in tiny NYC apartments) are stocked with just a few favorite items for when we get hungry.

  • a few are hard-boiled for a quick snack

Maldon Sea Salt

Extra Virgin Olive Oil

Diamond Crystal Kosher Salt

Fishwife tinned fish

Triscuits

Patagonia Sea Salt Crackers

Boneless skinless chicken thighs

  • tossed with some of this, broiled for 6 minutes a side

Tellicherry pepper

Fresh salmon

  • Fish brine

  • baked in oven 425 till done, topped w/butter + sea salt.

The above makes up about 95% of our diet, the exception being my occasional hankering for the Americanized, ground beef tacos of my childhood. I put ranch dressing on them.
